baked sweet potatoes and apples

I kind of stumbled on this yummy, sweet and healthy recipe the other night. I’ve been trying to come up with different ways to serve healthy side dishes to the boys. To be honest, I’m lucky and I know it, they eat steamed vegetables really well. So, I kind of become lazy and give them those all the time. I aim for variety so they don’t get bored, and so they acquire a taste for a many different foods. Sweet potatoes have actually been a tough one for us, for whatever reason. But this, this they LOVED! Even ate it for bedtime snack last night. And asked for seconds. For reals. Also, this is not just for kids – it’s delicious – plain and simple. I just play up the kid part because those taste buds are a little trickier.

what you need:

  • two apples, peeled cored and cut into bite sized pieces
  • two large sweet potatoes, peeled and cut into bite sized pieces
  • 3 T coconut oil, melted
  • 2 T pure maple syrup
  • 1/2 c coconut water
  • 1/2 t salt
  • 1/2 t cinnamon (a little more isn’t going to hurt anyone)
  • 1/4 t nutmeg

what to do (wait for it…this is an easy one!!):

Heat oven to 375 and grease up a 13 x 9 baking dish (I used some coconut oil for that)

  • mix everything in a bowl (yes! one bowl)
  • dump into the greased dish
  • cover with foil and bake about 30 mins
  • uncover, give it a good stir, and bake another 25-30 mins until tender

You can serve this up warm, which is tasty, or even the next day straight out of the fridge. I sent some with the boys for school lunch. It’s such a healthy ‘treat’ – can’t feel bad about that!

To be completely transparent here, I intended to make this dish to have with dinner the other night…and it took way too long to bake. It became their bedtime snack simply because it wasn’t ready in time for dinner. Poor planning, but I did NOT have an hour to cook dinner. More like 20 mins! I did, however, steam some asparagus instead…
