it’s so simple. and way quicker than making actual rice.
what you need:
- a head of cauliflower
- 1 lime, juiced
- 2 T butter
- 1/2 c cilantro
- salt & pepper
how to make:
put a cup or two into a blender or food processor, pulse on a low setting until you get a rice-like texture. put into a bowl and continue until you’ve blended all the cauliflower.
melt the butter in a nonstick pan, and add the riced cauliflower once hot. add salt and pepper to taste. cook for 5 minutes, but not too long or it will get mushy. add the lime juice a teaspoon at a time until you like the taste (my kids have said mine is too sour on occasion!). stir in your cilantro and you’re good to go!
you can refrigerate this for a couple days, but personally, i think it’s better to eat it all up when it’s warm.
