weekly menu {july 11-15}

back from vacation and holiday, back at the meal planning. takes a bit to get back into the discipline, but it’s worth it when you can have a few less headaches during the week!

i don’t often cook lamb, but we got some amazing local lamb chops and i was searching for the right way to prepare them. i don’t know if this is the best way, but this slow-cooker recipe is amazing for a weekday. simple prep you can even accomplish in the morning. but do it the night before and you’ll only spend minutes throwing it in the cooker in the morning. serve with rice and veggies and you can even have some leftovers!

chicken tacos can be a lifesaver if you’ve got a couple things on hand. first, chicken (obvi), then some tortillas and this sauce is also a good one (i know, i know, it says for beef..but it’s also mild and perfect for kiddie palettes). you can totally use your own spices and i do that often. but when you’re in no mood for effort and thinking, it’s good to have something on hand. i cook the chicken (bake, pan fry or poach) then heat it up in the skillet with the sauce. my cauliflower rice is one of my favorite sides, along with some corn on the cob because eating with your hands is fun.

family-style nachos are such a fun way to get the kids involved. i don’t make this often enough, but when we do, we really go for it. let the kids layer chips on a big platter, top with all your favorites, stuff you want warm first. cheese, beans, cooked meat, etc. pop it in the oven for a bit to melt that cheese and warm it all up. then add the cold stuff, salsa sour cream (we use plain greek yogurt because we always have it in the fridge). now dig in!

it’s grilling season, and we like to cook outside as much as possible. with burgers you can grill or just cook on the stove. we use local ground beef (about 1 lb) season with salt & pepper or some steak seasoning. top with cheese and your favorite toppings and you’re ready to rock. pair with oven fries (i buy frozen organic…making from scratch hasn’t been worth the effort for me). steamed veggies, salad or whatever else you like.
