as summer sinks into fall, i’m loving the cooler breezes and beautiful sunsets. and obviously all the apple recipes. the smell that this recipes leaves in the house it worth it alone. and feel free to just spoon the filling into your mouth straight from the pan (just wait until it cools a little, please).
makes 16 or so hand pies
- 6 medium size apples, peeled, cored and chopped
- 1 tablespoon lemon juice
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 2 tablespoons butter
- 1 egg
- 2 packages refrigerated pie dough (2 sheets in each)
heat oven to 450
line baking sheet with parchment or silpat sheets.
roll out the pie dough on a lightly floured surface, just so it doesn’t stick. use a small bowl (upside down) that measures approx 4-5 inches. use it to cut out dough rounds. set aside in the fridge until you need them.
in a medium bowl toss chopped apples with lemon juice. in a small bowl, combine 1 cup sugar, cornstarch, 1 teaspoon cinnamon, and nutmeg. add sugar mixture to apples.
mix the egg with a little bit of water and set aside.
melt butter in a skillet and add apple mixture. sauté for about 5 minutes until the apples have started to soften. and your place smells of all the nice things. butter, cinnamon, nutmeg, apples and sugar. gah. seriously. just walk out of your house for a bit and come back in. your mouth will start to water.
let the apple mixture cool a bit or it will soften the dough too much to handle.
place the dough on the lined baking sheets. place a few tablespoons of the filling in the dough. wet the edges and press together with a fork. lightly brush the top with some egg wash. repeat until you run out of pastry or filling.
put in the oven for 16 to 20 minutes, until golden (not reeeeaaallly dark like mine…but everyone said they still taste amazing). just don’t run to take a quick shower like i did, because that never works. thought i’d still take a pic of them though, and share, because…whatever. i’m too impatient to bake more and take photos!
